Omakase RI is a Japanese restaurant in Santos, recommended by the MICHELIN Guide. The name says it all: in Japanese, omakase means roughly "I leave it in your hands". Here the chef decides what reaches the table, and your only job is to taste.
The cooking and the experience
In omakase there's no menu to study. The chef serves a sequence of pieces, following the pace of the evening and the best fish available. It's precision cooking, where the rice, the cut and the temperature matter as much as the fish itself. Portugal has a generous sea, and Japanese cooking knows how to make the most of it like few others.
If you have allergies or don't eat a certain ingredient, say so when you book. With a set menu, the kitchen needs to know in advance to adapt.
The room and what to expect
It's an intimate format, designed for a few people at a time and with attention to detail. Watching the chef at work is part of the charm. Expect a meal at a calm pace, with each piece served at the right moment. The price level is €€€.
Arrive on time: in an omakase, service usually starts for everyone together, and walking in halfway is like arriving at the cinema after the film has started.
Santos around the table
Santos is a riverside neighbourhood between Cais do Sodré and Madragoa, known for design shops and a calmer nightlife than Bairro Alto. By day, the National Museum of Ancient Art is a short walk away, with its garden and view over the Tagus.
Madragoa, with its narrow, village-like streets, is right next door, and the Estrela Basilica is one climb away. For a riverside walk, head to Cais do Sodré and the Ribeira Market. Santos train station, on the Cascais line, also helps those coming from the coast.
